| Vinification | The grapes for our Dark Horse Zinfandel were harvested at optimal ripeness to ensure extraction of rich colours and velvety tannins. Warmer temperatures of 88°-92°F (31-33 °C) were used during fermentation in order to achieve more intense flavours and fruity aromas. After the fermentation was complete, the wine was aged on oak to add complexity and balance. |
