Vinification | Individual Sauvignon Blanc parcels were selected from the Awatere and Wairau Valley vineyards for this wine. The parcels were harvested and fermented separately, using selected yeast strains for Sauvignon Blanc to enhance varietal character. A long, cool fermentation took four weeks, after this the grapes of the different parcels were blended and stabilised, before being bottled. |
