| Vinification | Pressing: very slowly to respect the fruit. Juices from the last pressings are not used. No artificial yeasts or enzymes are used. Type: part of the wine is aged in 500 litre oak barrels and the other part in stainless steel vats. Length: 6 to 8 months. Throughout the aging process, decisions are taken only after careful tasting evaluation. The data obtained is completed through technical analysis. As with every other Joseph Drouhin wine, absolute priority is given to the true expression of terroir and character of the vintage. |
