| Vinification | The harvested grapes are hand-selected, after which fermentation takes place in open fermentation vats. After fermentation, the young wine remains in contact with the grape skins for some time. This is followed by 26 months of aging in 300-liter barrels of French and Romanian oak. No new wood is used, as this places too heavy an emphasis on the color and finesse of the wine. |
