| Vinification | The grapes were harvested by hand and mechanically in February and March. The fruit was finely crushed and subsequently fermented cool on the skins for two weeks in temperature-controlled stainless steel tanks at 25 to 28 °C. After completion of malolactic fermentation, the wine was aged for six months in contact with French and American oak. It was then gently filtered before bottling. |
