| Vinification | The Vermut Lustau Collection is crafted through a careful process where Lustau sherry wines, botanicals come together to create depth, balance and a strong identity. Everything begins with sherry wines selected for their distinctive character and profile. Lustau uses different solera-system aged sherry styles as base, providing each vermouth a unique personality and a genuine complex flavor. Different sherry styles are blended together (dry, nutty wines with sweet, fruity ones) to maximize wine base presence and notes. In parallel, a curated selection of herbs and spices are infused to extract aromas with precision. Each botanical is treated individualy to improve essences' contribution to the final recipe. These aromatic essences are then combined in a tincture which is eventually blended with the wine base in carefully measured proportions, shaping the final balance between sweetness, bitterness and freshness. After blending, the vermouth is left to rest and macerate for around 6 months in stainless steel so that all elements integrate harmoniously. This stage is essential to enhance balance and achieve the signature identity of this vermouth collection. The result is a range of vermouths that feels complex yet accessible, rooted in sherry elaboration tradition.
